The coffee is carefully hand-harvested and washed to remove the cherry that surrounds the bean before being decaffeinated by a series of soaks and rinses in pure mountain water. This process naturally soaks away more than 99% of the naturally-occurring caffeine in the coffee beans while leaving the important flavor compounds intact.
